Ingredients

  • 450 g (1 lb) chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced/smashed
  • 150 g (5 oz) broccoli florets
  • 1 red bell pepper, diced
  • 500 ml (2 cups) chicken broth
  • 200 ml (1 cup) heavy cream
  • 100 g (3.5 oz) grated cheese (cheddar or a mix of your choice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the chicken

In a large pot, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until they are golden brown and cooked through. Remove the chicken from the pot and set aside.

2. Cook the vegetables until soft

In the same pot, add a bit more oil if needed, and cook the onion and garlic until they are soft and fragrant, about 2-3 minutes. Add the broccoli and bell pepper, cooking for another 3-4 minutes until they start to soften.

3. Add liquids
