Golden and crisp on the outside, these sausage pillows hide a deliciously soft dough encasing a juicy sausage, complemented by the rich flavors of melted cheese and tangy mustard.

Perfectly satisfying and comforting, each bite brings a delightful combination of textures and tastes that make these sausage pillows a must-have for any cozy meal.

Ingredients

For the dough

  • 500 g (4 cups) all-purpose flour
  • 25 g (0.9 oz) fresh yeast or 7 g (2 1/4 teaspoons) dried yeast
  • 1 teaspoon sugar
  • 250 ml (1 cup) lukewarm milk
  • 50 g (3.5 tablespoons) butter, melted
  • 1 egg
  • 1 teaspoon salt

For the filling

  • 8-10 sausages
  • 100 g (1 cup) grated cheese (e.g., Trappista)
  • 2-3 tablespoons mustard
  • 1 egg for brushing

Instructions

1. Activate the yeast

In lukewarm milk, dissolve the sugar, then crumble in the fresh yeast (or sprinkle in the dried yeast). Let it sit for 5-10 minutes until it becomes frothy.

2. Prepare the dough

Sift the flour into a large bowl and add the salt.

Pour in the activated yeast, melted butter, and lightly beaten egg.

Knead the dough until it becomes smooth and elastic. If necessary, add a little more lukewarm milk or flour.

Cover the bowl with a kitchen towel and let the dough rise in a warm place for about 1 hour until it doubles in size.

3. Prepare the filling

While the dough is rising, prepare the sausages: if needed, cut them in half or thirds.

In a bowl, mix the mustard with the grated cheese.

4. Shape the pillows

Preheat the oven to 180°C (356°F).

On a floured surface, roll out the dough to about 1 cm thick.

Cut the dough into rectangular pieces large enough to wrap around the sausages.

Place a sausage in the center of each rectangle, spread a little cheese-mustard mixture on top, and then wrap the dough around the sausage. Press the edges together well.

5. Bake

Place the sausage pillows on a baking sheet lined with parchment paper.

Brush the tops with beaten egg to give them a shiny finish.

Bake them in the preheated oven for 20-25 minutes until golden brown.

6. Serve

Allow the sausage pillows to cool slightly, then serve them fresh, perhaps with a bit of extra mustard or ketchup on the side.
