Quick and full of flavor, Huevos Rancheros Express delivers a satisfying breakfast or brunch with minimal effort. Ingredients

  • 540g (19oz) diced tomatoes with liquid
  • 1 small onion, finely diced
  • 4 eggs
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Cooking oil (enough to cover the bottom of the pan)

Instructions

1. Heat a pan over medium heat and add enough cooking oil to coat the bottom. Once the oil is hot, sauté the diced onions until they become translucent and fragrant.

2. Stir in the diced tomatoes with their liquid. Add the oregano, salt, and pepper to taste. Continue cooking, stirring occasionally, until the tomato mixture thickens slightly, about 10-15 minutes.

3. In a separate pan, heat a bit of oil over medium heat. Crack the eggs into the pan and cook until the bottoms are set and the edges are slightly golden. Cover the pan and let the eggs cook for another minute until the whites are fully cooked but the yolks remain runny.

4. To serve, place the cooked eggs on a plate and generously spoon the thickened tomato sauce over them. For a more indulgent version, add diced avocado, grated cheddar, fresh cilantro, sliced jalapeños, and serve over a lightly fried tortilla.
