Ingredients

  • 300 g (2 cups) cherry tomatoes, halved
  • 1 red bell pepper, roasted and peeled
  • 1 small clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon fresh basil leaves
  • Optional: a pinch of red pepper flakes for heat

Instructions

1. Prepare the vegetables

Roast the red bell pepper by placing it under a broiler or over an open flame until the skin is charred. Let it cool, then peel off the skin and remove the seeds.

Halve the cherry tomatoes.

2. Blend the ingredients

In a blender or food processor, combine the roasted red bell pepper, cherry tomatoes, garlic, olive oil, balsamic vinegar, lemon juice, honey (or maple syrup), smoked paprika, salt, and black pepper.

Blend until smooth. You can adjust the consistency by adding a little water if needed.

3. Add fresh herbs

Add the fresh basil leaves to the mixture and pulse until they are finely chopped and well incorporated.

4. Adjust seasoning

Taste the dip and adjust the seasoning if necessary. Add more salt, pepper, or a splash of lemon juice to suit your taste.

5. Serve

Transfer the dip to a serving bowl and sprinkle with red pepper flakes if desired.
