Ingredients

Dough

  • 500 ml (2 cups) chicken broth
  • 250 ml (1 cup) milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 500 g (4 cups) wheat flour

Filling

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 500 g (1.1 lbs) cooked chicken breast, shredded
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • 200 g (7 oz) cream cheese (optional)

Breading

  • 2 eggs
  • Bread crumbs
  • Oil for frying

Preparation

1. Preparing the dough

In a large pot, bring the chicken broth, milk, butter, and salt to a boil.

Once boiling, add the flour all at once, stirring constantly until the dough is smooth and pulls away from the sides of the pot.

Remove from heat and let it cool.

2. Preparing the filling

Heat the olive oil in a pan over medium heat.

Add the chopped onion and garlic, and sauté until they are soft.

Add the shredded chicken breast, parsley, salt, and pepper, and mix well.

If desired, add the cream cheese and stir until it melts and is evenly distributed.

3. Shaping the Coxinha

Take a small piece of dough and flatten it slightly in your hand.

Place a spoonful of the chicken filling in the center, then shape the dough around the filling into small cone shapes (resembling a teardrop).

4. Breading and frying

Beat the eggs in a bowl. Dip the coxinhas in the beaten eggs, then coat them in bread crumbs.

Heat the oil in a pan over medium-high heat. Fry the coxinhas until golden brown, then place them on paper towels to absorb excess oil.
