Ingredients
- 1 can (450 g / 15 oz) of chickpeas (garbanzo beans), drained and rinsed
- 60 ml (1/4 cup) fresh lemon juice (1 large lemon)
- 60 g (1/4 cup) well-stirred tahini
- 2-3 garlic cloves, minced
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt to taste
- 2 to 3 tablespoons water
- Dash of ground paprika, for serving
Instructions
1. Prepare the chickpeas
Drain and rinse the chickpeas. If you prefer a smoother hummus, you can peel the chickpeas by gently rubbing them with your fingers to remove the skins.
2. Blend the ingredients
In a food processor, combine the tahini and lemon juice. Process for about 1 minute to whip the tahini and lemon juice into a creamy, light texture.
Add the olive oil, minced garlic, ground cumin, and a pinch of salt to the whipped tahini and lemon juice. Process for 30 seconds, scraping the sides and bottom of the bowl as needed.
3. Add chickpeas
Add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process until thick and quite smooth, 1 to 2 minutes.
4. Adjust the texture
With the food processor running, slowly add 2 to 3 tablespoons of water until you reach your desired consistency.
5. Taste and adjust
Taste the hummus and adjust the seasoning as needed. Add more salt, lemon juice, or cumin to taste.
6. Serve
Transfer the hummus to a serving bowl, drizzle with a little olive oil, and sprinkle with a dash of paprika.
