This creamy homemade cheese spread combines the richness of melted butter and cheese with the tang of sour cream, creating a smooth, velvety texture that’s perfect for spreading on fresh bread or crackers.

The optional hint of garlic adds a subtle depth of flavor, while the cooling time allows the spread to develop its full, rich taste, making it an irresistible addition to any snack or meal.

Ingredients

  • 250 g (9 oz) cottage cheese (preferably full-fat, add a little cream if the cottage cheese is dry)
  • 150 g (1/3 cup) butter
  • 100 g (1 cup) grated semi-hard cheese (like Trappista or any easily melting cheese)
  • 100 ml (1/3 cup) sour cream
  • 1 clove garlic (optional)
  • Salt, pepper to taste

Instructions

1. Prepare the Cottage Cheese Base

Place the cottage cheese in a bowl and mash it with a fork until smooth. If needed, add a little cream to make it creamier.

2. Melt the Butter

Melt the butter in a pan over medium heat, then remove it from the heat.

3. Add the Cheese

Stir the grated cheese into the melted butter until fully melted.

4. Combine

Pour the cheese-butter mixture into the cottage cheese, then add the sour cream. If you like, grate the garlic into the mixture. Season with salt and pepper to taste.

5. Blend

Use a hand blender or food processor to mix everything until you have a smooth, creamy texture.

6. Fill

If you have a tube (e.g., a clean, new piping bag or a cone made from parchment paper), fill it with the cheese mixture. If not, you can store the cheese spread in a sealed container in the fridge.

7. Chill

Place it in the fridge for a few hours or overnight to let the flavors meld and the cheese spread to firm up slightly.

You can try different flavors, such as adding herbs, paprika, or a bit of smoked cheese.
